The term “farm-to-table” has its roots in the work of people like Chef/Restaurateur Alice Waters and American Farmer/Author Joel Salatin — two upstarts from different ends of the food industry who saw the direction Big Agra and American Restaurants were going and rebelled against it. People like this and their passion for fresh, sustainable food and organic methods of production sparked the farm-to-table momentum and made it resonate in the culture.
When I started Thatcher’s in 2008 I did so to create a culinary inspired range for places I enjoyed going to, which also featured locally grown items. I remember looking on Zagat and Yelp, wondering if there were enough places to buy our all USDA certified organic libations.
Now, here were in in 2015 and I was looking for some new places to go out to in Chicago tonight and there were 659 “Farm-to-Table Restaurants”. I have the list of the original 98 that were there back when I was trying to figure out how to do this. Have to love this kind of progress!
