Being an adult means you don’t have to choose between a cocktail and dessert, you can have both. It’s been a hot one, so this summer we blended up some delicious and cold ice cream cocktails. We made these ice cream cocktails with our Thatcher’s Organic Small Batch Vodka, a neutral spirit that pairs well with nearly every flavor of ice cream!
5 Chilly Ice Cream Cocktails
Thatcher’s Vanilla Vodka Milkshake
Real ones know vanilla is anything but boring.
- 1 oz Thatcher’s Organic Small Batch Vodka
- .5 oz Amaretto Liqueur
- 1 oz Kahlua Coffee Liqueur
- 2 scoops vanilla ice cream
- 1 dash vanilla extract
- Whipped cream, garnish
- Chocolate shavings, garnish
In a blender, add 1 cup of ice cream with Amaretto, Kahlua, and Thatcher’s Organic Small Batch Vodka until smooth. Put in freezer and leave for one hour. Add remaining ice cream and blend until smooth again. Pour into martini or other cocktail glass. Top with whipped cream and shaved chocolate as desired.
Strawberries & Cream Cocktail
A mixture of a favorite summer ice cream and summer fruit.
- 1 oz Thatcher’s Organic Small Batch Vodka
- 1 oz Thatcher’s Organic Prickly Pear Liqueur
- 3 oz frozen strawberries, thawed
- 2 scoops strawberry ice cream
- 1 dash vanilla extract
- 8 oz crushed ice
- Whipped cream, garnish
- Strawberry, garnish
Place thawed frozen strawberries, Thatcher’s Organic Prickly Pear Liqueur, strawberry ice cream, vanilla extract, crushed ice, and Thatcher’s Organic Small Batch Vodka into a blender. Cover and blend until smooth. Pour into a glass and garnish with whipped cream and a fresh strawberry.
Grasshopper Cocktail
The classic minty, chocolatey ice cream cocktail.
- 2 oz Thatcher’s Organic Small Batch Vodka
- 2 scoops vanilla ice cream
- 2 oz Crème de menthe
- 1 oz Creme de cocoa
- 8 oz ice
- Mint sprig, garnish
- Chocolate shavings, garnish
Combine Thatcher’s Organic Small Batch Vodka, ice cream, ice, Crème de menthe, and Crème de cocoa, in a blender and blend until completely smooth. Pour the mixture into a glass and garnish with whipped cream and mint sprig.
Rocky Road Cocktail
Marshmallows, chocolate, and nuts make up this ice cream cocktail.
- 2 oz Thatcher’s Organic Small Batch Vodka
- 2 scoops chocolate ice cream
- 4 oz ice
- 1 oz salted nuts
- 1 oz mini marshmallows
- Chocolate syrup, garnish
Combine Thatcher’s Organic Small Batch Vodka, chocolate ice cream, and ice in a blender and blend until smooth. Add in nuts and marshmallows and give two quick pulses. Pour into a martini glass and drizzle with chocolate syrup.
Thatcher’s Strawberry Peach Mango Slushie Cocktail
Not exactly ice cream, but we couldn’t resist a dairy-free, fruity slushie cocktail.
- 1 oz Thatcher’s Organic Small Batch Vodka
- 1 oz Thatcher’s Organic Peach Liqueur
- 1 oz Thatcher’s Organic Mango Liqueur
- 2 cups ice
- 5 oz frozen strawberries
- Sparkling water
- Peach slice, garnish
- Strawberry slice, garnish
In a blender quickly blend ice and vodka, just until the ice is crushed. Add in frozen strawberries and blend again until combined. Add in peach and mango liqueur and blend one last time. Pour into glass and top with sparkling water. Garnish with peach slice and strawberry slice.
