Sometimes, less is more. We all love a good boozy beverage, but if you’re looking to ease up on the sauce, a low-proof cocktail can help you hit your goals without putting down the glass. Packing all the flavor, but with a little less punch, enjoy 2 or 3 of these low-ABV cocktails while keeping things light.
Cucumber Green Tea
- 1 oz Thatcher’s Organic Cucumber Liqueur
- .75 oz lime juice
- 4 oz green tea
- .5 oz agave syrup
- Splash of club soda
- 5-7 fresh mint leaves
- Cucumber ribbon, garnish
In a glass, muddle mint leaves with lime juice. Add remaining ingredients with ice to the glass and stir until well incorporated. Garnish with cucumber ribbon.
Cucumber Basil Agua Fresca
- 1 lb unpeeled Persian cucumbers ends trimmed, plus more for garnish
- 1.5 cups fresh basil leaves (no stems), plus more sprigs on the stem for garnish
- 4 oz cold water
- 3.5 oz freshly squeezed lime juice
- 2 oz honey
- Pinch coarse sea salt
- 1 bar spoon orange flower water (optional)
- 2.5 oz Thatcher’s Organic Elderflower Liqueur
- 12 dashes Angostura orange bitters
- 1 (750 ml) chilled sparkling water
- Ice cubes
Combine the cucumber, basil, water, lime juice, honey and salt in the carafe of a blender. Place the top on the blender carafe, then blend until the mixture is smooth, at least 30 seconds. Strain the mixture twice through a sieve, pushing on the back of the mixture with a spatula to extract as much juice as possible. Discard the solids and set mixture aside.
In a pitcher, mix the cucumber agua fresca, Thatcher’s Organic Elderflower Liqueur, Angostura orange bitters and 2 cups of ice.
To serve, fill a Tom Collins glass with 3 to 4 ice cubes, add in 0.5 cup of the cucumber basil agua fresca cocktail mixture and top with 0.5 cup of sparkling water. Stir to combine, garnish with a sprig of basil leaves and some thinly-sliced cucumber and serve.

Prickly Pear Chilton
- 1.5 oz Thatcher’s Organic Prickly Pear Liqueur
- Juice of 1 lemon
- Soda water
- Ice
- Salt for rim
Place your salt on a plate. Run a cut lemon around the rim of a cocktail glass, and dip the rim in your plate of salt to coat the entire rim of the glass. Fill glass with ice. Add lemon juice, Thatcher’s Organic Prickly Pear Liqueur, and top with soda water. Stir with a cocktail spoon.

Blood Orange Sunrise
- 1.5 oz Pomegranate juice
- 1 oz Thatcher’s Organic Blood Orange Liqueur
- .5 oz Lime juice
- .5 tsp Honey syrup
- Sparkling water
- 1 Blood Orange twist
Add ice and pomegranate juice to a lowball glass. Add Thatcher’s Organic Blood Orange Liqueur, lime juice, and homemade honey syrup to a mixing glass. Stir for 10-15 seconds. Strain into lowball glass. Top with sparkling water. Garnish with blood orange twist.
