- 2 oz Thatcher’s Organic Vodka
- 0.75 oz fresh lemon juice
- 0.5 oz honey syrup (equal parts honey and warm water)
- 1 small sprig fresh thyme
- Optional egg white or aquafaba
Method
Lightly muddle thyme with honey syrup. Add remaining ingredients. Shake with ice, dry shaking first if using egg white. Strain into a chilled coupe.

- 0.5 oz fresh lemon juice
- 0.5 oz honey

Method
Muddle ginger with honey in a heat-safe mug. Add lemon juice and spirit. Top with hot water and stir gently.
