Our team is excited for a movie night with our besties later this week and is eager to indulge in the latest Blockbuster Barbie film. You probably are too. But before we access the fantastical world Greta Gerwig has created, we’re setting aside time to craft a few pink Barbie cocktails to match Margot Robbie’s outfits. These cocktails feature our pink-hued organic liqueurs like blood orange, watermelon, hibiscus, and prickly pear. And because they’re all made with organic and sustainable ingredients, they make life in plastic a little more fantastic. Let’s Go Barbie
A pink, boozy lemonade to get the party started.
- 1 oz Thatcher’s Organic Hibiscus Liqueur
- 1 oz Campari
- 1 oz vodka
- 3 oz lemonade
- Club soda, to top
- Ice
Combine Thatcher’s Organic Hibiscus Liqueur, Campari, and vodka in a shaker with ice. Shake vigorously for 15 seconds to chill ingredients. Add lemonade and shake again. Strain the mixture into a highball glass filled with fresh ice cubes. Top with club soda, leaving room at the top for fizz.
Barbie & Ken
A swirl of yellow mango and pink, hibiscus coconut cream perfect for a Barbie rollerblading adventure.
- 1 diced fresh mango
- 8 oz pineapple juice
- 2 oz Thatcher’s Organic Mango Liqueur
- 2 oz coconut cream
- 2 oz water
- 1 frozen banana
- 2 oz Thatcher’s Organic Hibiscus Liqueur
- Ice
Combine mango, 4 oz pineapple juice, Thatcher’s Organic Mango Liqueur, and a handful of ice into a blender and blend at high speed until completely smooth. Pour into a container and refrigerate. Blend coconut cream, water, banana, last 4 oz of pineapple juice, Thatcher’s Organic Hibiscus Liqueur, and ice together on medium high for 20-30 seconds until smooth. Do not overblend or the coconut cream could separate. In two glasses layer mango and coconut hibiscus purées until filled.
Fantastic in Plastic
A pink prickly pear drink worthy of a Barbie beach day.
- 1.5 oz Thatcher’s Organic Prickly Pear Liqueur
- 1 oz triple sec
- 1 oz lemon juice
- Soda Water
- Ice
- Salt, for rim
Place your salt on a plate. Run a cut lemon around the rim of a cocktail glass and dip the rim in your plate of salt to coat the entire rim of the glass. Fill the glass with ice and add lemon juice, Thatcher’s Organic Prickly Pear Liqueur, and triple sec. Top with soda water. Stir with a cocktail spoon and serve.
Classic Pink Barbie
A classic pink cocktail for a classic pink Barbie.
- 1 oz Thatcher’s Organic Blood Orange Liqueur
- 1 oz Thatcher’s Organic Vodka
- 1 oz cranberry juice
- 1 oz orange juice
- 1 oz pineapple juice
- Lime
Combine Thatcher’s Organic Blood Orange Liqueur, Thatcher’s Organic Vodka, and all juices in a cocktail shaker. Fill a glass with ice and pour the mixture over the ice. Garnish with a lime.
Pro tip: make this one in batch to pre-game your Barbie viewing party.
I Am Become Death
A Barbie cocktail with a little Oppenheimer action on the side!
- 1.5 oz Thatcher’s Organic Vodka
- 1 oz Amarito Almond Amaretto
- 0.5 Thatcher’s Organic Elderflower Liqueur
- 0.5 lemon juice
- Egg white
- ½ teaspoon activated charcoal
Combine Thatcher’s Organic Vodka, Amarito Almond Amaretto, Thatcher’s Organic Elderflower Liqueur, lemon juice, activated charcoal, and egg white into a shaker. Dry shake until well incorporated. Add ice to the shaker and combine until chilled. Strain into a Nick and Nora glass and serve. This is a dark and broody counterpoint to all the pink perfection.
