Summer cocktails should be as refreshing as a dip in the lake and as easygoing as your vacation attitude. No fuss, no pretentious garnishes (unless you’re into that), just cold, fruity sips that pair perfectly with sandy toes, sunburned shoulders, and questionable life choices.
These beach-friendly, boat-approved, poolside-perfect cocktails are designed for maximum chill and minimum effort, and all made with Thatcher’s Organic, all natural, sustainably-farmed, and sustainably-packed spirits. Tiny cocktail umbrellas are encouraged, but not mandatory. Enjoy your summer!
Whipped Strawberry Cocktail
Ice cream, vodka, and one of our favorite summer fruits. It’s a strawberry dream.
1.5 oz Thatcher’s Organic Peach Liqueur
1.5 oz Thatcher’s Organic Small Batch Vodka
1 cup vanilla ice cream
4 oz sliced frozen strawberries
2 oz orange juice
4 oz margarita mix
Sliced strawberries, garnish
Combine all ingredients in the blender and pulse until smooth. Pour into margarita glass and garnish with sliced strawberries. Serves two
Pineapple Mango Surf Spritz
Like a tropical vacation, but without ever having to leave your own backyard
1.5 oz Thatcher’s Organic Mango Liqueur
1 oz Coppercraft “Holland to Holland” Rum
2 oz pineapple juice
1 oz soda water
Splash of lime juice
Pineapple wedge, garnish
Cocktail umbrella, garnish
Shake everything but the soda with ice, strain into a highball glass full of crushed ice, top with soda. Garnish with pineapple wedge and cocktail umbrella.
Watermelon Cooler Crash
Hydration is important. This is basically a watermelon smoothie.
2 oz Thatcher’s Organic Watermelon Liqueur
1.5 oz Thatcher’s Organic Small Batch Vodka
5 oz unseeded watermelon chunks
0.5 oz lime juice
Pinch of salt
Watermelon slice, garnish
Mint sprig, garnish
In a blender with a handful of ice, puree the watermelon chunks. Add in all the other ingredients and give two quick pulses. Pour the mixture over ice and garnish with watermelon slice and mint sprig.
Sunray (Elderflower Lemonade)
So light and tasty, you’ll almost forget it’s instagrammable too..
2 oz Thatcher’s Organic Elderflower Liqueur
1 oz Coppercraft Gin
3 oz lemonade
1 oz club soda
Lemon wheel, garnish
edible flower, garnish
In a shaker without ice, shake elderflower liqueur, gin, and lemonade together. Pour in a glass over ice, top with club soda and give a stir. Garnish with lemon wheel and edible flower.
The “Oops, I Made a Pitcher” Prickly Pear Punch
For when “just one drink” turns into “just one more.”
8 oz Thatcher’s Organic Prickly Pear Liqueur
6 oz silver tequila
16 oz grapefruit juice
16 oz lime sparkling water
Handful of frozen berries
Combine prickly pear liqueur, tequila, and grapefruit juice in a pitcher. Pour in lime sparkling water and frozen berries over the top. Serves 6.
