5 Champagne Cocktails for Christmas
Midnight Kiss
- 1 oz Thatcher Organic Hibiscus Liqueur
- Champagne
- 4 oz chopped strawberries
- 4 oz granulated sugar
- 2 tsp lemon juice
- 6 oz water
Combine strawberries, sugar, lemon juice and water in a small saucepan. Bring to a boil on high heat and then reduce to a simmer. Let cook for approximately 15 minutes. Strawberries will become soft and bright in color and a reddish syrup will form. Take off heat and drain strawberries, keeping the syrup in a separate bowl. Set aside and allow to cool. Once strawberry syrup is cooled, spoon 4 tablespoons into the bottom of each champagne flute. Add Thatcher’s Organic Hibiscus liqueur and top with champagne.
Prickly Pear Sparkler
- 1.5 oz Thatcher’s Organic Prickly Pear Liqueur
- .5 oz lemon juice
- Champagne
- Lemon wedge
- Salt
Place salt on a plate. Run a cut lemon around the rim of a cocktail glass and dip into salt to coat the entire rim of the glass. Fill glass with ice and add lemon juice and Thatcher’s Organic Prickly Pear Liqueur. Top with champagne. Stir with a cocktail spoon and serve.
Toast to Sunset
- 1.5 oz pomegranate juice
- 1 oz Thatcher’s Organic Blood Orange Liqueur
- .5 oz lime juice
- .5 tsp honey syrup
- Champagne
- Blood orange twist
Add pomegranate juice to a champagne glass. Combine Thatcher’s Organic Blood Orange Liqueur, lime juice, and homemade honey syrup in a mixing glass. Stir for 10-15 seconds and strain into the champagne glass. Top with champagne and garnish with blood orange twist.
Spicy Mango Cocktail w/ Tequila And Champagne
- 4 oz mango, fresh and cubed
- 2 oz orange juice
- 1 oz tequila
- 1 oz Thatcher’s Organic Mango Liqueur
- 1 tbsp white sugar
- 5 ice cubes
- 1/4 tsp ground ginger
- 1/4 tsp red cayenne pepper
- 1 tsp lime juice
- 8 oz champagne
Combine fresh mango, orange juice, tequila, white sugar, Thatcher’s Organic Mango Liqueur and ice cubes in blender. Blend on high speed until completely smooth. Add ground ginger, cayenne pepper, lime juice, and champagne. Blend on low speed until champagne is fully incorporated into the mango base. Serve immediately while chilled.

Cucumber Herb Champagne Sparkler
- 1 split champagne
- .5 oz Thatcher’s Organic Cucumber Liqueur
- 6 oz lemon-flavored mineral water, chilled
- 1/4 cucumber, thinly sliced
- 6 leaves basil, chopped
- 2 lemon peels
Fill champagne flute three-fourths full with chilled sparkling wine and Thatcher’s Organic Cucumber Liqueur. Top with lemon-flavored mineral water. Divide sliced cucumbers, basil, and lemon peel between each glass and float on top. Serve immediately.
